Course description and aims
You will work with couverture chocolate and ganache bases as we show you how to temper chocolate. We explain the importance of correct handling, storage and other properties of couverture as you produce a variety of ganache based items. You will be using moulding, piping and shaping techniques for the pieces. Various finishing and decorating ideas will be explored to create delicious confectionery. Package and take your finished product home to enjoy. Some skills are helpful, but not compulsory for this specialised course.
Enrol at any location
You will need to attend approximately 6 hours of class over 1 day per week. An indication of how your weekly timetable may look is: Saturday, 9:00am to 3:00pm.
